In Norwegian coastal areas around springtime, cod, or stockfish, is hung to dry on wooden racks called stocks—hence the name. Vikings would take them on their epic voyages. This “white gold” can later be reconstituted by soaking it in water and then used in delicious dishes such as bacalao.
