Alf Roald Sætre—affectionately known as “Oyster Dundee”—is a celebrated Norwegian seafood expert, restaurateur and former professional fisherman, known for his deep connection to Norway’s coastal traditions and commitment to sustainable seafood sourcing. He is best recognized as the culinary leader and co-owner of Cornelius Seafood Restaurant in Bergen, one of Norway’s most acclaimed waterfront dining destinations. With a lifelong passion for the sea, Mr. Sætre began his career as a fisherman before transitioning into hospitality, where he brings his hands-on knowledge of marine life to his guests.
Mr. Sætre is renowned for creating immersive dining experiences that showcase the bounty of the fjords, often personally greeting guests by boat. His work has been featured in the BBC’s Scandinavia with Simon Reeve, Full-Time Travel and numerous culinary publications.
